Menu Plan Monday 2/1


Here is this week's menu of whats for dinner.

Monday: Chicken & Noodles (maybe, might get switched with Tuesday)

Tuesday: Spaghetti & Meatballs, Garlic toast & side salad, green beans for Jimmy

Wednesday: Slow Cooker Chicken Taco Soup

Thursday: Baked Potato Soup

Friday: Free Night or Homemade Pizza, depends if I feel like it!

Menu Plan Monday - January 18th





Alright, I am trying this AGAIN, if at first you don't succeed, try, try again, right? Riiiight...well since I have been pregnant and all, I have not exactly been able to follow a meal plan. It seems every day I have to play it by ear (stomach?) and that is just a bit difficult...so now that I am out of the first trimester I am going to try to get somewhat more organized in the weekly meal department. Luckily if I have the week all planned out, I can switch the meals around if something doesn't sound good for that particular day. If none of it sounds good, then well, I will have to eat cereal or something while Jimmy and hubby eat what I make....hopefully ;-) Ok, here goes.

Monday: Cheese Ravioli with spaghetti sauce and broccoli on the side
Tuesday: Tuna Fish & Rice or Macaroni with green beans on the side
Wednesday: Chicken Enchiladas with rice & corn on the side
Thursday: Beef & Broccoli in the slow cooker (or leftovers if any)
Friday: My Birthday! So hopefully hubby is taking me out to eat.... ;-)
Saturday: Pizza
Sunday: eating at the in-laws

Menu Plan Monday - 6/29

Monday
Breakfast: Oatmeal & Blueberries
Lunch: Leftover Tuna Casserole
Dinner: Spaghetti

Tuesday
Breakfast: Scrambled Eggs
Lunch: Peanut Butter & Jelly, Carrots
Dinner: Homemade Mac & Cheese, Green Beans

Wednesday
Breakfast: Oatmeal & Blueberries
Lunch: Leftover Mac & Cheese
Dinner: Mexican Casserole

Thursday
Breakfast: Scrambled Eggs
Lunch: Leftover Mexican Casserole
Dinner: Potato Soup, carryover from last week

Friday
Breakfast: Oatmeal & Blueberries
Lunch: PB&J, carrots
Dinner: Going to a baseball game - Cincinnati Reds baby! Time for some real "healthy" food, think we will check out the dollar menu! Mmm hotdogs!

Saturday
Picnic at my Dad & Kathy's so will be eating randomly all day =)

Sunday
Free For All - who knows what will happen! lol

Menu Plan Monday - 6/22

This week I am starting to plan our menus again, so I decided to join in Menu Plan Monday over at orgjunkie.com to help me be consistent. Make sure to go over and check out all the great meal ideas!

I am going to plan out all meals this week. I am doing Breakfasts and Lunches for the sake of my 18 month old Jimmy so I am not scrambling trying to figure something out at last minute and so we don't get stuck in a rut. I will try to link to the recipes I will be using, but I usually don't make them exactly as they appear. I try to make everything from scratch when possible and use the most natural ingredients I can.

Monday
Breakfast: Oatmeal with Blueberries
Lunch: Organic or All Natural Peanut Butter & Jelly (fruit only spread) & Carrots
Dinner: Zucchini Parmesan

Tuesday
Breakfast: Blueberry Muffins - These are delicious!!! We absolutely LOVE them! I change the recipe a little - substitute half or all of the flour with whole wheat flour, add some wheat germ in, use applesauce instead of oil. I also use brown sugar instead of white for the topping.
Lunch: Leftover Zucchini Parmesan
Dinner: Italian Breaded Tilapia

Wednesday
Breakfast: Oatmeal with Strawberries
Lunch: Grilled Cheese & Greenbeans
Dinner: Chicken Taco Soup in the Slow Cooker

Thursday
Breakfast: Blueberry Muffins
Lunch: Leftover Chicken Taco Soup
Dinner: Potato Soup

Friday
Breakfast: Oatmeal with fruit
Lunch: Spinach & Cheddar Eggs
Dinner: Homemade Pizza

Saturday
Breakfast: Blueberry Muffins
Lunch: Organic or All Natural Peanut Butter & Jelly (fruit only spread) & Carrots
Dinner: Grill out night

Sunday
Breakfast: Eggs with Spinach & Cheddar
Lunch: Usually eat at the in-laws
Dinner: Leftovers

Ahhh, that feels good! Now lets hope I actually stick to it! Once it is "written down" it is so much easier. Why did I stop doing this again?? ;-)

Feeding the Wee One

Here is a sampling of what my little Jimmy usually eats. Thought I would post it in case anyone is having a hard time coming up with ideas.

Breakfast:
- Oatmeal or Cream of Wheat with fruit
- Pancakes or waffles and fruit
- Scrambled eggs, whole wheat bread
(not toast, toasting removes some nutrients) and fruit
- Whatever whole grain "O" cereal we have and fruit

Snack:
- Fruit
- Cottage Cheese
- Cheese
- Slice of bread
- Fruit leather
- Whole grain crackers

Lunch (or dinner if not cooking a meal for whatever reason):
- Grilled Cheese on whole grain bread and some veggies
- Pasta and veggies
- Quesadilla and some fruit
- Peanut butter sandwich (over a year old and not allergic!), plain or maybe with some all natural fruit spread
(try pureeing some fruit in the blender)
- Leftovers from dinner
- This is gonna sound gross, but he loves it: Hard boiled egg yolk mixed in cottage cheese =)

Another snack

Dinner: Usually whatever we are having. I separate his own portion out before adding strong spices/salt etc.

I try to make sure he gets a grain & veggie or grain & fruit in every meal, and a protein (beans, lentils, cheese, meat) in at least 1 meal, but try for 2 meals a day.

Jimmy is still breastfeeding about 6 times a day and I offer him water (sometimes with a little apple juice mixed in) as well. I hope this is helpful to someone. I know it is helpful to me to just see it "written down"!
