Mexi-Mac

I haven't posted a recipe in a while, so I thought I would post what I made for dinner tonight. Usually we have Mexican on Wednesdays, but this week got a little messed up so Mexican Night was tonight.

1 lb. Ground Beef
1 pkg. Taco seasoning
1 & 1/2 cups Elbow Macaroni
1 - 15 oz can of black beans (rinsed)
2 - 10 oz cans of diced tomatoes & green chilies
1 - 15 oz can of sweet corn
1/2 - 15 oz can of black olives, chopped
(these are estimates on can sizes, just get whatever is closest in oz)

In a large skillet (I used a 5 qt saucepan), brown 1 lb. ground beef. Drain, then add taco seasoning packet and about 2 & 1/4 cups water. Mix together and bring to a boil. Add the macaroni, stir, bring back to a boil. Turn down heat and simmer for 10-15 mins, or until macaroni is tender. Add in the black beans, tomatoes, corn and black olives and cook on low heat for about 10 mins. The last 10 mins may need to be adjusted and you can up the heat a little. I had it simmering on low for a while because Jim wasn't home yet. Seve it up with some sour cream, shredded cheddar and hot sauce and you are good to go! Hubby loved it and I hope you do too. =)
